A mandoline is the fastest way to prep veg, and the fastest way to cut a fingertip. This upright design keeps your hand away from the blade: drop food into the chute and press down on the plunger. Turn the side knob to switch between slices, julienne strips and dice without swapping blades, and set the thickness from wafer-thin up to 8mm. Everything drops straight into the catch box underneath. It works well for potatoes, carrots, onions, cucumbers, peppers and apples, and the stainless-steel blades stay put, so there are no loose blades in the drawer.
